BT Milan: seven types of dough

New in season: red ginseng and charcoal

Milan, 7 October 2015. The BT Milano is a multifaceted venue that is ideal for any occasion, thanks to the rooms divided between the two floors of the restaurant: intimacy for couples in the 'Sala dei Beati' on the first floor and large spaces for groups of friends in the 'Sala del Peccato' on the second floor. The pizza is offered in a round version or by the metre for an original pizza, with as many as seven different doughs: cereal, soya, kamut, wheat flour, stone-ground wholemeal and, new for the season, squid ink or red ginseng. Each boasts a slow, natural rising process. Some recipes? "Norma" with tomato, aubergines and salted ricotta cheese, "Golosona" with basil pesto, buffalo, cherry tomatoes and grana flakes and "Bronte" with Bronte pistachio pesto, buffalo and sausage.
