BT Milan presents the Bertagnina pumpkin

Themed evenings and menus with chef Massimo Della Vedova

Milan, 23 October 2015. On Friday and Saturday, the BT Milano restaurant and pizzeria hosted two themed evenings dedicated to one of the gastronomic excellences of the season: the Bertagnina pumpkin from Dorno, a municipality in central-eastern Lomellina in the province of Pavia. This particular type of pumpkin is part of the ancient culinary tradition of these areas, has a particular 'berretto' shape and is used for the preparation of desserts, soups and risottos. Among the greatest connoisseurs and experts is the BT Milano chef Massimo Della Vedova, who in collaboration with the Pro Loco di Dorno has written a book on the Zucca Bertagnina and for these two evenings has created a whole series of ad hoc dishes: pumpkin parmiggiana, pumpkin risotto with Sicilian prawns and truffle caviar, black pizza with pumpkin, porcini, speck and fior di latte cream and pumpkin and apple muffins with pumpkin ice cream and amaretti cream.
